Air Fryer Jalapeño Chicken Meatballs Recipe


Ingredients 

  • ▢ 1-1.5 pound ground chicken (or boneless skinless chicken breast)
  • ▢ 2-3 jalapeños (seeded for mild, unseeded for spicy)
  • ▢ 1/3 cup freshly chopped parsley
  • ▢ 1/2 red onion (sliced)
  • ▢ 1 teaspoon salt
  • ▢ Optional: 1/4 teaspoon black pepper
  • ▢ 1/3 cup Cheddar cheese shredded
  • ▢ 1 large egg
  • ▢ 2 cloves garlic or 2 tsp of minced garlic

Instructions

  • Preheat your oven air fry setting to 380 degrees Fahrenheit, and spray your pan with oil spray (or your air fryer to 380 degrees Fahrenheit, and spray the basket with oil spray)
  • Add the chicken to the food processor bowl
  • Add the jalapeños, parsley, red onion, salt, pepper, Cheddar cheese, egg, and garlic to the food processor on top of the chicken
  • Pulse to combine until the ingredients are well mixed
  • Use an ice cream scoop or spoon to portion out equal-sized balls
  • Place the meatballs in the air fryer basket/pan, leaving a little space between them. Work in batches if needed!
  • Air fry the meatballs for 12-14+ minutes or until they are cooked through and golden browned on the outside *Internal temp of at least 165 degrees F.*
  • Store in an airtight container in the fridge for up to 4 days or in freezer bags in the freezer for up 3 months

  1. Prepare – Preheat the air fryer, and grease the basket with cooking spray or if using the air fry setting in your oven, preheat your oven and spray your frying pan 
  2. Prepare the Meatball Mixture – If using chicken breast; Slice the chicken into small pieces – If using ground chicken; add handfuls to the bowl of a food processor. Add the remaining ingredients. Pulse to combine. 
  3. Air Fry. – Use an ice cream scoop or spoon to portion out the mixture into equal-sized balls. Arrange them in an even layer in the air fryer basket/pan, leaving a little space between each chicken meatball. Work in batches if needed! Air fry until they’re browned on the outside and cooked all the way through. *Internal temp of at least 165 degrees F.*

  • Refrigerator: Once fully cooled, leftover chicken meatballs can be transferred to an airtight container or sealable bag and stored in the fridge for up to 4 days.
